This is very much like a quiche, and is yummy either hot or cold.
1 garlic clove, diced
1 onion, diced
1 teaspoon dill
1 pkt frozen chopped spinach
250ml cooking cream (lite variety can be used)
1/2 cup milk
1 cup SR flour (wholemeal may be used)
100g feta, crumbled
1 cup grated cheese
100g diced bacon
Diced capsicum, corn kernals, or other quiche-suitable veges can also be added.
Preheat oven to 200
Fry the garlic and onion, until the onion is transparent, add dill - then add optional bacon and/or capsicum and lightly fry.
Cook the spinach according to the instructions on the box, remove any excess moisture then add spinach to the garlic/onion mix. Remove the frypan from heat and allow to rest.
Mix the eggs, cream and milk together then add the flour and stir to combine.
Add the grated cheese, and feta to the egg mix, then stir in the garlic/onion/spinach mixture.
Poor the mixture into a lightly greased pie dish - ensure that there is a good spread of the ingredients throughout the pie (you don't want any clumps of the one ingredient in the one spot).
Put in the oven for 30 minutes.
When cooked it will have a developed a light base, and have a golden top.
Allow to sit for 5 to 10 minutes before serving.
